Hi,
To change or remove the mark of the "Product out of stock" symbol ,we having an option in admin panel.
To change the mark as your requirement ,go to admin panel,in left panel,
findout Configuration >> Stock >> Mark product out of stock.
Here, edit "Mark product out of stock" and change the mark as your requirement.
